06. JAPCHAE - Stir-fried Glass Noodle with vegetables



Korean name : Japchae[dƷap tʃe] , 잡채.


Japchae is one of the most popular party dishes and the most beloved by foreigners.

Serves : 2

Ingredients
Each 0.1 lbs/50g of Korean glass noodle, any mushroom, carrot, spinach, beef, onion, and paprika
Vegetable oil(3 tablespoons)
Salt(2 teaspoon)
Korean Soy sauce(2 tablespoons)
Sugar(1 tablespoon)
Minced garlic( ½ tablespoon)
Black or white pepper(1/2 teaspoon)
Roasted sesame seeds(1/2 tablespoon)
Sesame oil(1/2 tablespoon)

How to cook
·Noodle : Have the glass noodle in cold or warm water for 30mins.
                Cook it in boiling water for 6mins.
                Rinse it with cold water and drain.
 ·Vegetables : Julienne all vegetables & beef .
                       Stir fry all except the carrot  & spinach with 1 ½ tablespoon of vegetable oil,
                           1 teaspoon of salt, and minced garlic
                           on a non-stick pan over medium heat.
                       Stir fry the carrot with a pinch of salt on a pan separately. 
                            Otherwise, carrot will discolor others.
                       Blanch the spinach with a pinch of salt for 30 secs and rinse it 
                            with cold water. Squeeze out and cut it roughly.
1. Transfer the prepped noodle, vegetables & beef to a bowl.
2. Mix it well with Korean soy sauce, sugar, pepper, sesame oil, and sesame seeds
    with a gloved hand.
3. Stir fry them again on the pan for 30 secs and eat.
Tip)You can eat it directly without the final step(stir frying) right after mixing all with condiments. But, in this case, you don’t have to rinse the noodle with cold water. Try both methods and find your one.
