Is same Gimbap as Sushi? Answer is “No”.
These have 2 big differences, which are the rice and
filling.
The rice for Japanese Sushi is seasoned with vinegar,
sugar, and salt. And they serve raw fish(some cooked) or vegetable or egg roll
on the bite sized rice. They also have roll typed sushi, which is called “Makki” and it has
only 1 or 2 fillings.
Now, let’s see Gimbap.
Gim means dried
seaweed and Bap means steam-cooked rice.
It is a rice roll with various fillings in a dried
seaweed.
The rice for Korean Gimbap is seasoned with salt and sesame oil.
Gimbap has various
fillings in it and basically they are fried egg, carrot, spinach, crab
sticks(imitation crab meats), radish pickle, etc. A particular filling names a
characteristic Gimbap such as Beef gimbap, Kimchi gimbap, tuna gimbap, etc and some particular shapes have particular names such
as Samgak(means
triangle), nude gimbap, Chungmu gimbap, and Kkoma(means “kids”) gimbap.

Samgak Gimbap : Triangle Gimbap. It has only one filling.
Nude Gimbap : Naked Gimbap not wearing Gim.
But it has Gim inside.
Kkoma Gimbap : Kkoma means small and cute kids. This has relatively less
fillings and has another nickname “drug Gimbap”. It is not because it contains drug but is too
delicious to be addicted to.
Chungmu Gimbap : This
origins from a region “Chungmu” rather than the shape. It does not have filling in
but is to eat it with separate Banchan. I’ll post a full story about this in a
separate content.
In Korea there are some Gimbap franchise.
They sell
various kinds of Gimbap for 24 hours. Besides Gimbap, they sell many other dishes that are good with Gimbap. If you have
any chance to visit Korea, you can try a platter which all kinds of gimbap they have are
served in.
