03. Kimchi


The most famous Korean food are Kimchi, Bulgogi, and Bibimbap.
Here I’d tell about Kimchi[gimchi].
Kimchi is an essential banchan which is served for every meals.
It is sort of spicy salad or pickle made of fermented cabbage.
There are more than 100 kinds of Kimchi that even Korean people don’t know. Baechu Kimchi “made of Korean cabbage is common. Instead of cabbage, radish or cucumber or green onion or regional special vegetables can be the main ingredient.

Korean people eat each spoon of rice together with Kimchi.
Kimchi makes rice or other Banchan to be swallowed smooth thanks to the moisture and the spicy flavor to stimulate appetite.
Every meals include Kimchi or sort of pickle though the base is not the rice but is noodle, porridge. Korean people always feel necessary also when eating foreign dishes. Pizza or Spaghetti with pickle is an example.
If you order pizza in Korea, cucumber pickle will always be served.  Even delivery service always include pickle and parmesan cheese powder or hot sauce.

Kimchi has very good & various taste. It’s fresh, cool, sour, spicy, sweet, savory, etc.
On TV programs we can see that many foreigners love Kimchi. Some ask Kimchi ordering main dishes, some ask if there is any food made of Kimchi to order without seeing menu, etc.
There are a lot of food that can be made with Kimchi.
The most famous are the following and you can go to each recipe.
•*Kimchi Jjigae([gimchi zzige], Kimchi stew)
•*Kimchi Jeon([gimchi dƷʌn], Kimchi pancake)
•*Kimchi Bokkeumbap[Kimchi Fried Rice)
Kimchi has been sold in refrigerated up to now. Otherwise, it becomes rot. However, recently a company achieved to can it maintaining the good flavor not to change at room temperature. I'ts very innovative. I have listed it on eBay.
